Happy Chef Churros

INGREDIENTS :
1 cup (250 mL) water
1/4 cup (58g) unsalted butter (chopped in cubes, softened)
1 tbsp (14g) raw cane sugar
1/4 tsp (pinch) sea salt
1/2 tsp (pinch x2) cinnamon
1 cup (145g) coconut flour
1 egg
1 tsp (4 mL) vanilla extract
Vegetable Oil (for frying)
Happy Churro Coating :
1/2 cup (104g) raw cane sugar
1 tsp cinnamon
METHOD :
- In a shallow bowl, whisk together the half cup of raw sugar with a tsp of cinnamon for the "Happy Churro Coating", set aside.
- In a large pot, heat 1.5 inches of vegetable oil over medium-high heat (360 °F; 182 °C). While oil is heating, grab a large saucepan to begin batter.
- For the 'Batter Mix'; add water, butter, raw sugar, 1/2 tsp cinnamon and 1/4 tsp salt to pan and bring to boil over medium-high heat.
- Once to a boil, add your coconut flour and reduce heat to medium-low and cook, stirring constantly using a silicon spatula until mixture is smooth. Transfer mix into large bowl and allow to cool for 5 minutes.
- After cooling, add vanilla and egg to flour mixture and blend using a electric mixer. It will separate at first, blend until mixture is smooth.
- Transfer to a piping bag (a ziplock bag will work as well) fit with a rounded star tip (1/2 inch) *optional - if you do not have this, do not worry, you can still join the fun and make by slicing a small corner of the ziplock bag to pipe out churros.
- Grab a pair of cooking shears (scissors), carefully pipe out mixture into preheated oil, cut with shears once reached desired size. I do mine between 4-6 inches in length.
- Let fry until golden brown, roughly 2 minutes per side then transfer for a quick dry on to paper towels then quickly transfer to the Happy Churro Coating mixture and roll, completely coating your churros.
- Repeat til you are out of dough. Serve and #GetHappy !
#HappyChefFact : You can make these "Happy Chef Oreo Churros" by adding in 1 tbsp of ground cocoa in the 'Batter Mix'. Coat lightly with confection sugar and serve with vanilla ice cream or marshmallow fluff. Another @EdibleDee classic!
